Zucchini-Basil Frittata
Ingredients
- 2 eggs, whisked
- 2 Small zucchinis (240 grams), shredded
- 1/4 Medium onion (40 grams), minced
- 1/2 cup Parmesan cheese (55 grams), grated
- 2 Tbsp Fresh Basil, chopped
- 2 Garlic cloves, minced
- Olive (or avocado) oil spray
- 1/4 teaspoon Sea salt
- Ground pepper for taste
- 1/2 tsp Hot sauce or 1/4 tsp cayenne pepper (optional)
- 1 slice Organic whole wheat bread
Instructions
- Preheat broiler.
- Spray the oil over a nonstick skillet and heat it over medium heat. Add onion zucchini, and garlic and cook, stirring frequently, until softened and the moisture has almost evaporated, 4 to 5 minutes.
- Meanwhile, whisk eggs, hot sauce, salt, and pepper. Add parmesan, basil, zucchini, and onion.
- Spray the remaining oil over oven-safe skillet and pour the frittata mixture in it.
- Cook until lightly golden, about 4 minutes.
- Serve with a slice of whole grain crisp bread or organic whole wheat bead.
