Whole Wheat Coconut Waffles
Ingredients
For Waffles:
- 1 cup Whole wheat flour
- 3 Tbsp Coconut flour
- 1 Tbsp Coconut flakes
- 1 Egg, beaten
- 1/2 cup Coconut milk (or Organic fat-free milk)
- 1/2 tsp Baking soda
- 1 tsp Apple Cider Vinegar
- 1/8 tsp Sea Salt
- 2 Tbsp Organic Stevia blend
- 1/2 tsp Vanilla Extract
- Avocado oil (or Extra Virgin Olive oil) cooking spray
- 8-10 small Strawberries
For Yogurt:
- 1 cup Organic Plain Yogurt
- 1/2 tsp Vanilla Extract
- 1 1/2 tsp Organic Stevia blend
Instructions
- Preheat your waffle maker.
- In a medium bowl, whisk together flour, beaten egg, milk, coconut flakes, baking soda, vinegar, salt, and stevia sweetener. Mix until combined.
- Spray a little oil on the waffle iron and pour the batter onto the center by using a spoon. Close the lid and cook until steaming stops, about 5 minutes.
- Carefully transfer cooked waffles to the plates. Serve immediately with fat free vanilla yogurt and fresh berries.
