Turkish Style Meatballs with Lettuce Salad
Ingredients
For Meatballs:
- 8 oz 90-92% lean ground Beef (organic or grass-fed is preferable)
- 3 Tbsp Yellow onion
- 2 Tbsp Whole wheat flour
- 1 Tbsp Grapeseed oil
- 1 Tbsp Tomato paste (look for bpa-free can)
- 1 Tbsp fresh lemon juice
- 1/2 tsp Sea salt
- 1/2 tsp ground Black pepper
- 1 tsp Paprika
- 1/4 tsp Cayenne pepper
- 1 tsp dried Mint leaves
- 2 Tbsp Fresh parsley, finely chopped
- 2 sec Avocado oil cooking spray
For a Salad:
- 2 cups (170g) Roman Lettuce, chopped
- 1 medium Tomato, thinly sliced
- 1/2 cup (2 leaves) Radicchio, finely shredded and soaked in water for 30 min (optional)
- 2 tsp Yellow or Red onion, thinly sliced
- 4 Kosher dill Pickles
- Fresh Parsley, for garnish
- Pinch of Sea Salt
- Ground Black pepper, to taste
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Extra Virgin Olive Oil
Instructions
- Shred radicchio and soak it in water for 30 minutes to remove bitterness. In a large bowl, blend together ground meat, finely chopped onion and parsley, flour, tomato paste, lemon juice, oil, salt, pepper, paprika, cayenne pepper, and mint. Cover and refrigerate for 15 minutes.
- Divide the meat mixture into small pieces and form thin patties of them (about 2-inch wide and 1/3-inch thick). Spray the grilling skillet with cooking oil and grill the meatballs 2 to 3 minutes on each side over medium heat.
- In a large bowl mix together lettuce, radicchio, onion, vinegar, and olive oil. Season with salt and pepper and transfer to plates. Garnish with sliced tomato, pickles, and parsley.
