Strawberry Oatmeal
Ingredients
- 1 cup Old fashioned (rolled) oats
- 1 cup Organic fat-free milk
- 1 cup Unsweetened almond milk
- 1 cup (145 g) Fresh strawberries
- 0.3 cup (30 g) Crushed almonds, soaked in water
- 2 Tbsp Unsweetened coconut flakes
- 2 Tbsp (24 g) Chia seeds
- 1 1/2 Tbsp Organic stevia blend
- 1 Tbsp Agave nectar (or honey)
- 1/4 tsp Sea salt
- 2 tsp Vanilla extract
Instructions
- Bring milk to boil.
- Stir in the oats, chia seeds, coconut flakes, and salt.
- Cook over medium heat until oatmeal has thickened and the liquid has been absorbed, about 5 minutes, stirring occasionally.
- Remove from heat and stir in stevia, agave nectar, and vanilla extract. Transfer to a bowl and top with strawberries, almonds, and additional almond milk, if desired.
