Spinach and Goat cheese Omelet
Ingredients
- 3 large Eggs
- 2 cups Baby-spinach, rinsed
- 2 ounce (56g) reduced fat Goat or Feta Cheese
- 1 Tbsp Onion, chopped
- Pinch of Sea salt
- Ground pepper for taste
- 1 sec Cooking spray (i prefer avocado spray oil)
- 1 slice Whole wheat bread, cut in 2 pieces
- 2 small slices Watermelon
Instructions
- Heat oil in a medium nonstick skillet over medium heat. Add onion and cook until softened, about 3 minutes. Add spinach and cook an additional 1 minute.
- Transfer to a bowl and mix with cheese.
- Rinse and dry the skillet. Then place it on the stove and heat the remaining oil over medium-high heat.
- Meanwhile whisk eggs, salt, and pepper in a medium bowl. Pour egg mixture into the skillet, swirling it to allow egg spread evenly over the surface. Cook for 1 to 2 minutes, gently lifting the edges with a spatula, so the uncooked egg can flow underneath. Transfer the spinach mixture on the top of the omelet.
- When the bottom of the omelet is golden, fold it by using a spatula, and carefully slide it to the plate.
- Serve with whole wheat bread (or whole grain crisp bread) and fruit of your choice on the side.
