Menemen (scrambled eggs with tomatoes, green bell pepper and onion)
Ingredients
- 1 large Egg, whisked
- 2 medium Tomatoes, skinned and finely chopped
- 1 medium Green Bell Pepper, finely chopped
- 2 Tbsp Onion, finely chopped
- Extra Virgin Olive oil (or Avocado oil) cooking spray
- 1/4 tsp Sea salt
- Pinch of ground Black pepper
- 1/2 tsp dried Oregano
- 1/3 tsp ground Paprika
- 1 tsp Parsley or Cilantro, minced
- 2 slices Whole grain crisp bread (or 1 slice Organic whole wheat bread)
Instructions
- Heat oil in a large nonstick skillet over medium heat. Add bell pepper and cook, stirring frequently, about 2 minutes. Add onion and cook an additional 2 minutes, until soft.
- Stir in tomatoes, dried oregano, and paprika. Cover the skillet and simmer until most of the liquid is evaporated, 3 to 5 minutes. (To skin tomatoes, place them in the pot of boiling water for 30 seconds. Then wash them with cold water and easily peel the skin)
- Pour in beaten eggs, stir well. Season with salt and pepper. Cook, stirring frequently, until just barely set, about 1 minute. Remove from heat. Sprinkle with parsley. Serve with a slice of whole wheat bread (organic is preferred) or 2 slices of whole grain crisp bread.
