Grilled Tilapia Salad
Ingredients
For Grilled Tilapia:
- 2 Tilapia filets
- 1 Tbsp Lemon juice
- 1 Tbsp White wine balsamic vinegar
- 1 garlic clove, minced
- 1/3 tsp Sea salt
- Pinch of Ground Black pepper
- 1/4 tsp Paprika
- 1/4 tsp Cayenne pepper
- 1/2 tsp Dried oregano
- 1 sec Olive oil (or Avocado oil) Cooking spray
- Parsley or Cilantro for serving
For the Salad:
- 1 1/2 cup Romaine lettuce, chopped
- 12 Cherry tomatoes, cut in halves
- 2 Tbsp Pine nuts
- Pinch Sea salt
- 2 tsp Lemon juice
- 1 Tbsp Extra Virgin Olive Oil
Instructions
For Grilled Tilapia:
- In a medium bowl, whisk together lemon juice, vinegar, garlic, salt, and spices. Brush the mixture onto the both sides of tilapia.
- Spray oil over the grilling skillet and heat it over medium-high heat. Grill the fish until golden-brown, about 3 minutes on each side. You can pour the remaining lemon-vinegar mixture over the fish after turning the side.
- Transfer to plates and sprinkle with minced parsley (or cilantro).
For the Salad:
- In a large bowl, gently mix chopped lettuce, cherry tomatoes, pine nuts, lemon juice and olive oil. Sprinkle with salt and pepper. Divide between two plates.
