Chicken, Mushroom and Zucchini Saute
Ingredients
- 1 pound Chicken breast, cut into 1-inch pieces
- 1 medium Zucchini, chopped
- 1 medium Squash, chopped
- 9 oz Baby Bella (Crimini) Mushrooms, sliced
- 1 Tbsp Canola oil (can be substituted with avocado or grapeseed oil)
- 2 Garlic cloves, minced
- 1 Tbsp White wine Balsamic Vinegar
- 2 Tbsp Liquid Aminos (soy sauce healthier alternative)
- 1/2 tsp Ground Ginger
- Sesame seeds, for serving
- 1/2 cup Brown rice, cooked and salted
Instructions
- In a skillet, heat the oil over medium heat. Add chicken and cook, stirring occasionally, until golden brown and cooked through, about 6 minutes.
- Transfer chicken to a plate. Add mushrooms, zucchini, and squash to the skillet and cook for 3 minutes. Stir in Liquid Aminos, Vinegar, garlic, and ground ginger and cook for additional 2 to 3 minutes, until vegetables soften.
- Add the chicken to the skillet and stir to combine with zucchini and mushrooms.
- Serve over Brown rice, sprinkled with sesame seeds for garnish.
