Chicken and Chickpea Stew
Notes
It`s a low glycemic dish. It is rich with proteins, fiber, vitamins C, B and K, calcium, selenium, magnesium, manganese and potassium.
Ingredients
- 2 boneless skinless chicken breast halves (0.7 lb / 350g)
- 1/2 can chickpeas, rinsed (look for organic or non-GMO, non-BPA can)
- 1/2 cup yellow onion, chopped
- 2 tablespoon tomato paste (look for organic or non-GMO, non-BPA can)
- 1 1/2 cup hot water
- 2 cloves garlic, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon ground pepper
- 1/2 teaspoon coriander
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice
- 1/8 cup parsley, chopped
Instructions
- Hit oil in a large skillet over medium-high heat. Add chicken and cook, turning several times, until opaque, 4-5 minutes.
- Stir in onion, lemon juice and 1/2 teaspoon salt, and cook additional 2 minutes.
- Add chickpeas, tomato paste and hot water.
- Bring to simmer and reduce hit to medium. Add remaining 1/2 teaspoon salt, pepper, coriander, and paprika. Cover and cook, stirring occasionally, until water almost evaporates, about 20 minutes.
- Serve over buckwheat (brown rice, couscous), sprinkled with parsley. Add the remaining 1/2 tbsp of olive oil to the buckwheat for taste.
